Try this salad dressing with your next head of Romaine.
Ingredients:
1 tsp Worcestershire sauce.
1/4 cup salad oil
Parmesan cheese
1 tsp lemon juice
1 egg, coddled (To coddle the egg place it in boiling water for 2 minutes. Break the egg into a bowl and whisk.)
1/4 tsp dry mustard
salt and pepper
1 garlic clove chopped fine
1/4 cup old cheddar finely shredded.
Mix and serve with lettuce and croutons.

hey where are the photos?
I'm always worried about raw egg in a dressing. Can I substitute something else for the egg yolk?
True, there are concerns about using raw eggs these days, but you can partially cook the yolk by stirring it in a smaller container set over another container of boiling water. (double boiler)or use the microwave,for only a few short minutes checking and stirring often. I haven't tried dried eggs yet, but they may be the answer. I have used these in baking, but not a dressing.
In addition to my earlier remarks...and because I couldn't remember the term coddled...it is not uncommon to "coddle" a whole egg and add it to the dressing. Some recipes don't even use eggs anymore, so just eliminate the egg or substitute a splash of buttermilk. Thank you for your comment...it enabled me to bring the original recipe up to date!
